Gooey Browned Butter Rice Krispie Treats
What’s better than an ooey gooey melt in your mouth Rice Krispie treat?! To me these are the ultimate nostalgia food. As a kid how exciting was it to open your lunch box and find one of these? I still get excited when my mom makes them! Now, your favorite childhood treat is being cranked up a notch with rich browned butter and big pieces of gooey marshmallow. A childhood dream for an adult palette (although my kiddos go nuts for these too)!
So, let’s get into how to make these delectable squares! It all starts with the browned butter. This twist on a traditional Rice Krispie adds a depth of flavor that can’t be matched. The next twist is to add in extra marshmallows at the end so you come away with pockets of extra gooey goodness. This recipe yields really thick Rice Krispie treats so make sure your knife is sharp when you cut into and enjoy these!
Gooey Browned Butter Rice Krispie Treats
Prep Time: 5 minutes | Bake Time: 15 minutes | Total Time: 20 minutes
Ingredients
- 8 Cups Rice Krispie Cereal
- 2 Bags 10oz Mini Marshmallows
- 1.5 Sticks Butter
- 1tsp Vanilla
- One Pinch Kosher Salt
Instructions
- Line a 9x13 baking dish with aluminum foil and grease bottom and sides with softened butter.
- In a large pot, melt butter over medium heat. Stir occasionally. It will start to foam, turn bright yellow, and then start to turn golden and small brown bits will start to form. Remove from heat right when the bits on the bottom start to turn brown.
- Set 2 cups of marshmallows to the side then add remaining marshmallows to the pot with the vanilla and salt and return to medium heat. Stir continuously until marshmallows are completely melted.
- Remove from heat and stir in Rice Krispie cereal.
- Add remaining marshmallows and stir until combined, but not totally melted (this is what creates the extra gooey pockets)
- Pour into prepared baking pan and press down using either the butter wrapper or greased hands to prevent sticking.
- Allow to cool completely before cutting.

Tips and Tricks
Butter- When browning the butter make sure you remove from heat right when you see the brown bits form. Allowing the butter to brown too much can lead to an overpowering taste and darker color.
Marshmallows- When adding the extra marshmallows at the end stir until just evenly combined so those gooey pockets form throughout.
Setting- When pressing the mixture into the pan I like to use the wrapper from the butter to press it into shape to prevent it from sticking to my hands. You can also spray your hands lightly with cooking spray to have the same effect.
