Shortbread Cookies
I am a HUGE Ted Lasso fan! I think it was one of the best feel good shows to come out of the pandemic and I was heartbroken when it ended. So, I decided to figure out how to make Teds iconic homemade shortbread cookies. These are perfectly buttery, not too sweet, and pair perfectly with afternoon tea. And the best part is they are SO easy to make! Just 6 easy ingredients that you probably already have in your pantry to make the perfect shortbread. Flour, sugar, butter, vanilla, and salt. That’s it! These shortbread cookies will certainly make you BELIEVE that baking can be so simple and that simple can sometimes bring you the most joy!
It’s important to use extra cold butter for these shortbread cookies. Cold butter ensures that the cookies won’t spread out and become thin. It’s what gets you that dense taller shape. Also important, don’t overwork the dough. The tenderness of these shortbread cookies is what makes them so delicious and classic and overworking them will cause them to become tough. I like to top mine with corse sugar to give them that extra crunch. This step is optional, but I highly recommend it! Shortbread Cookies
Prep Time: 10 minutes | Bake Time: 35 minutes | Total Time: 45 minutes
Ingredients
- 2 Cups Flour
- 3/4 Cup Granulated Sugar
- Pinch of Salt
- 1.5tsp Vanilla Extract
- 1 Cup Butter Cold and Cubed
- Corse Sugar For Topping
Instructions
- Preheat oven to 350 and line an 8X8 pan with parchment paper.
- In a food processor add all ingredients (except corse sugar) and pulse until a dough starts to form around the blades.
- Press dough evenly into prepared pan and top liberally with corse sugar.
- Bake for 35 minutes or until the edges become golden brown.
- Allow to cool completely before cutting into rectangles.

Tips and Tricks
Butter- Make sure the butter is extra cold. Cold butter prevents the dough from spreading so you get those perfect tall cookies.
Mixing- Do not over mix this dough. Classic shortbread is perfectly tender and over mixing the dough will cause it to become tough.
Cooling- Make sure you allow the shortbread to cool completely before cutting into it so that it sets and won’t fall apart.
